Something a little different to take to your next potluck gathering. Ingredients:
3/4 cup extra virgin olive oil |
1/3 cup red wine vinegar |
1 1/2 teaspoons salt |
3/4 teaspoon sugar |
1/2 teaspoon basil |
6 peppercorns |
1 bay leaf |
1 clove garlic, minced |
2 lbs whole mushrooms |
Directions:
1. Simmer all ingredients (except mushrooms) in a covered saucepan about 10 minutes. 2. Stir in mushrooms and coat entirely with marinade; cook 5- 8 minutes or until tender. 3. Refrigerate; drain at serving time. |
