Marinated Mushroom,artichoke,tomato Salad |

A refreshing and delicios sald that I have been making for years. Goes great at a buffet or cookout. Ingredients:
1 pkg. frozen or canned artichoke hearts,cooked and cut in half |
1 lb. fresh mushrooms,cut in half |
3/4 c water |
1/2 c red wine vinegar |
1/4 c canola oil |
1 garlic clove,minced |
3/4 tsp salt |
1/4 tsp pepper |
1/2 tsp thyme |
1/4 tsp oregano |
1 bay leaf |
3/4 lb cherry tomatoes,halved |
chopped parsley |
Directions:
1. Combine the mushrooms with the cooked,drained ,cut artichokes. 2. In a seperate bowl,mix water,vinegar,oil,garlic and seasonings. Pour over mushrooms and artichokes and toss lightly. Cover mixture and refrigerate to marinate(at least 24 hours). At serving time,place mixture on bed of lettuce. Add cherry tomatoes and sprinkle with chopped parsley. 3. My pic. is the original recipe which was tomatoes,mushrooms and greens. ! added the artichokes later on. |
