Marinated Mozzarella Bites |

Use these cubes as an appetizer, or toss it into a salad or as part of an antipasto tray. Ingredients:
1 cup olive oil |
3/8 to 1/2 tsp. red pepper flakes |
2 medium cloves garlic, minced |
about 20 grindings of freshly ground pepper |
pinch salt |
1 pound mozzarella, cut into 1 1/2 inch cubes |
Directions:
1. Heat the olive oil in a small pan over low heat. 2. Add the red pepper flakes, garlic and pepper and leave over very low heat for about 5 minutes. 3. Cool and add salt 4. Pour over the marinade over the cheese and toss to coat well. 5. Let the cheese marinate at room temperature for several hours. (Or let it marinate in the refrigerate where it will keep well for several days; bring to room temperature before serving. 6. Serve with toothpicks |
