I keep a batch this in the fridge. It makes a lovely bruschetta. Easily doubled. Ingredients:
1/2 lb mozzarella cheese, cut in tiny cubes |
3 tablespoons olive oil |
3 sun-dried tomatoes, slivered |
1 teaspoon thyme |
1 teaspoon oregano |
1 teaspoon basil |
1 teaspoon garlic, minced |
1/4 teaspoon chile |
salt and pepper |
Directions:
1. Toss all ingredients. 2. Marinate. 3. Cut a baguette lengthwise. 4. Brush with oil. 5. Rub with garlic. 6. Toast lightly. 7. Top with mozzarella mixture. 8. Grill. |
