Marinated Kohlrabi And Carrots |

Very nice change of paste with this delight. I got this from an estate sale and absolutely love it. Ingredients:
6 small kohlrabi peeled and cut into matchsticks |
3 medium carrots peeled and cut into matchsticks |
1/2 cup olive oil |
2 tablespoons fresh lemon juice |
2 tablespoons sherry vinegar |
1 teaspoon sugar |
1 tablespoon capers rinsed and drained |
1/2 teaspoon dried thyme |
salt and pepper |
Directions:
1. Cook kohlrabi and carrot in boiling water for 2 minutes. 2. Drain well and place in a jar or bowl. 3. Whisk together remaining ingredients then pour over vegetables and cover. 4. Refrigerate 48 hours stirring vegetables occasionally. 5. Drain some of the marinade before serving. |
