A wonderful salad to serve with any number of main dishes. I usually serve with pot roast but I'm thinking this would be good with fish as well. I found this one on the net. Ingredients:
2 pounds fresh green beans, trimmed |
1/4 cup chopped red onions |
2 cups cherry tomato halves |
3 tablespoons balsamic vinegar |
2 teaspoons dijon mustard |
2 teaspoons sugar |
2 tablespoons olive oil |
salt and pepper to taste |
Directions:
1. Steam the green beans until crisp-tender. Remove from heat and place green beans in a bowl of water containing ice to chill. Drain. Add the red onion and tomato. 2. Use a small bowl, and combine together the vinegar, mustard, sugar, olive oil, salt, and pepper, and toss with the green bean mixture. Serve, or refrigerate until serving. |
