Made this up one night. I've used fresh or canned petite diced tomatoes in a pinch. Great with rice, especially if you cook the rice in chicken stock. Enjoy! Ingredients:
4 roma tomatoes, finely diced |
1 cucumber, finely diced |
1 bell pepper, finely diced |
1 vidalia onions or 1 red onion, finely diced |
16 ounces cannellini beans, rinsed & drained |
1/3 cup feta cheese, crumbled |
1/4 cup extra virgin olive oil |
1/2 cup red wine vinegar |
1 teaspoon white vinegar |
1 tablespoon minced fresh basil |
1 teaspoon salt |
1/2 teaspoon pepper |
Directions:
1. Chop all veggies & place in a large bowl; add rinsed canellini beans. In a small bowl mix dressing ingredients. Pour dressing over salad and mix lightly. Sprinkle with feta cheese. Serve immediately or cover & refrigerate to allow flavors to blend more. |
