Marinated Garbanzos (Chickpeas) |

This is a basic dish. I made this for potlucks and picnics for something different. Cook time is cooling time. Ingredients:
20 ounces garbanzo beans, drained |
1/2 cup oil |
3 tablespoons vinegar |
1/2 cup chopped fresh parsley |
1/4 cup chopped scallion |
1 dash garlic salt |
salt and pepper |
Directions:
1. Combine all ingredients and allow to marinate in the refrigerator for at least 2 hours. 2. Drain. 3. Serve with toast rounds or as part of an antipasto tray. |
