A wonderful marinated cheese. Ingredients:
1 lb. feta cheese, cut into bite size cubes |
1/2 cup extra-virgin olive oil |
2 tbls. green bell pepper, finely chopped |
2 tbls. red bell pepper, finely chopped |
1 tbls. fresh parsley, chopped (1 tsp. dried ) |
2 tsp. fresh rosemary, chopped (1 tsp. dried) |
1 tsp. black peppercorns |
1/2 tsp. red pepper flakes |
1/4 tsp. salt |
1/4 tsp. pepper |
Directions:
1. Cook time does not include marinade time 2. Put all ingredients except cheese into mixing bowl 3. Mix with whisk until well blended 4. Put cheese cubes in plastic zip bag 5. Pour marinade over cheese 6. Refrigerate and occasionally mix and shake marinade 7. Marinade for up to 2 days 8. After removing cheese, I have added vinegar to marinade to make dressing for salad |
