Marinated English Cucumber and Onions |

If marinating overnight, slice the cucumber a bit thicker so it retains some crunch. Ingredients:
1/3 cup rice vinegar |
2 tablespoons chopped fresh mint |
1 1/2 tablespoons sugar |
1 1/2 teaspoons honey |
1/4 teaspoon salt |
1/8 teaspoon freshly ground black pepper |
3 cups (1/4-inch-thick) slices english cucumber |
1 cup vertically sliced vidalia or other sweet onion |
Directions:
1. Combine first 6 ingredients in a large bowl, stirring until sugar dissolves. Add sliced cucumber and onion, and toss well. Cover and refrigerate at least 3 hours, tossing occasionally. |
