These are very tasty and are a great addition to a platter for a party. Ingredients:
1/2 cup olive oil |
1/2 cup vinegar |
3 tablespoons fresh parsley, chopped |
3 tablespoons minced onion |
1 teaspoon sugar |
1 teaspoon dried basil |
salt and pepper to taste, about 1/2 teaspoon to start |
3 cloves garlic, minced |
1 block sharp cheddar cheese, cut into thick slices, 1/4-inch thick |
1 block pepper jack cheese, cut into thick slices, 1/4-inch thick |
Directions:
1. Combine oil, vinegar, parsley, onion, sugar, basil, garlic, salt and pepper in a jar with a tight-fitting lid. 2. Shake well. 3. Stand cheese slices upright in a shallow dish. 4. Pour marinade over cheese. 5. Cover and refrigerate overnight. 6. Transfer cheese slices to a serving platter. 7. Spoon some of the marinade over cheese. 8. Garnish with parsley if desired and serve with assorted crackers. |
