This is a nice snack to have on hand for all ages. You can increase the heat by adding dried pepper flakes, sliced jalapenos, or hot sauce. Ingredients:
1/2 lb baby carrots, sliced in half, horizontally |
1 -2 garlic clove, crushed |
1/4 teaspoon dried oregano |
kosher salt |
freshly cracked black pepper |
2 tablespoons red wine vinegar |
olive oil |
Directions:
1. Parboil the carrots until just tender, about 5 minutes. 2. Drain well and place in a deep serving dish. 3. Mix the garlic, oregano, salt and pepper and red wine and pour over the carrots. 4. Then pour the olive oil over the carrots to cover. 5. Wrap with plastic and chill for 2-3 hours before serving. |
