This marinated carrot salad has great texture and great flavor. Try it, you'll love it. This recipe is sometimes called copper pennies. Ingredients:
2 lb carrots, peeled and sliced |
1 large onion, sliced |
1 green pepper, chopped |
1 (10 3/4 oz) tomato soup, undiluted |
1 cup sugar |
1 tsp dry mustard |
1 cup vinegar |
1 tsp salt |
3/4 cup oil |
opt ional- cauliflower slices |
Directions:
1. Cook carrots until crisp and tender in a small amount of boiling water, drain. 2. Combine carrots, cauliflower (if using) onion and green pepper. Set aside. 3. Combine the remaining ingredients, stirring until well mixed. 4. Pour over the veggies and toss lightly. 5. Refrigerate over night or several hours. |
