This is a salad that I have made over the years and even the kids like it - just a little zing to the carrot Ingredients:
1 lb. carrots |
1 oinion sliced |
1 green pepper sliced |
1/2 can (10 oz) tomato soup |
1/4 cup white sugar |
1/2 cup vegetable oil |
1/2 tsp. dry mustard |
1/3 cup vinegar |
1/2 tsp. salt |
1/4 tsp. pepper |
Directions:
1. Cut carrots in 1/4 slices. Cook till just tender. Do not overcook. Drain 2. Add sliced onions and peppers to carrots. 3. Whisk the remaining ingredients together. Pour over vegetables. 4. Let it sit in the fridge overnight. 5. To Serve: Lift vegetables out of sauce. Left over sauce can be used again or as a salad dressing. |
