Mixed beans and tomato, can keep in your refrigerator for 3-4 days. Adapted from / Ingredients:
2 cups green beans cut into 1-inch lengths |
15 oz lima beans, drained and rinsed |
15 oz kidney beans, drained and rinsed |
2 tbs minced onion |
3 cloves garlic, pressed |
1 large ripe fresh tomato, chopped |
2 tbs chopped fresh basil |
1 tbs chopped fresh oregano |
1 tbs chopped fresh parsley |
3 tbs fresh lemon juice |
2 tbs extra virgin olive oil |
1 salt and pepper |
Directions:
1. Mince onion and press garlic and let sit for 5 minutes. 2. Fill the bottom of a steamer with 2 inches of water and add green beans; steam for 5 minutes. 3. Drain and rinse canned beans, being certain to remove excess moisture. 4. Mix all ingredients together and marinate for 15 minutes or longer, if possible. |
