Marinated Artichoke Salad |

This is a quick and simple recipe for a fat burning salad! Needs to be refridgerated for at least an hour after preparation before serving. Ingredients:
2 cans (13-15 oz) artichokes hearts packed in water (or 2 cups water plus 4 fresh artichoke hearts) |
1 garlic clove, minced |
4 t flaxseed or olive oil |
1/4 c fresh lemon juice |
1 1/2 t apple cider vinegar |
1/2 t cayenne pepper |
mixed greens |
Directions:
1. Drain the (canned) artichoke hearts, and rinse well with water. 2. Place 4 artichoke hearts in a large bowl, and mash with the garlic. 3. Stir in the flaxseed or olive oil, lemon juice, vinegar, and cayenne, and mix well. 4. Quarter the remaining hearts, and mix well with the dressing. 5. Refrigerate at least 1 hour. 6. Arrange on a bed of mixed greens and serve. |
