Easy and delicious antipasto to serve at get-togethers... Ingredients:
1/4 c olive oil |
1/4 c red wine vinegar |
2 tb orange juice |
1 tsp grated orange peel |
1 tsp dried rosemary,crushed |
1 tsp dried tarragon |
1/2 lb. mozzarella cheese,cubed |
2/3 c pimiento stuffed olives |
2/3 c pitted greek olives |
2/3 c pitted ripe olives |
1 jar (4-1/2 oz) whole mushrooms,drained |
1/2 lb thinly sliced hard salami |
Directions:
1. In large resealable bag,combine first 6 ingredients. Add the cheese,olives and mushrooms;seal bag,turn to coat. Refrigerate overnight. 2. Dranin marinade;reserving 2 TB. Thread salami onto toothpicks. 3. Arrange on large platter;drizzle with reserved marinade. 4. Arrange cheese mixture around salami. |
