Marinated Antipasto Pasta Salad |

Any time of year is right for a tasty pasta salad. Serve with crusty Italian bread or crisp bread sticks. Ingredients:
dressing |
2 cloves garlic |
2/3c white balsamic vinegar or white wine vinegar |
2tbs dijon mustard |
1tsp salt |
1/2tsp sugar |
1c extra virgin olive oil |
pasta salad |
4 oz. uncooked ziti or mostaccioli pasta |
6oz genoa salami,diced |
6oz. provolone or mozzarella,diced |
12 kalamata olives |
12 cherry tomatoes |
4 bottled pepperoncini peppers,seeded and sliced |
lettuce leaves |
basil leaves,chopped |
Directions:
1. Dressing:Drop garlic through food processor feed tube with motor running. Process till garlic minced 2. Add vinegar,mustard,salt and sugar;process to blend. With motor running,slowly pour oil through feed tube;process till thickened. Cover;refrigerate 2 hours or up to 1 month 3. Salad: Cook past according to directions;drainand rinse with cold water. 4. Combine pasta,salami,cheese,olives,tomatoes and pepperoncini in med. bowl. Add dressing;toss well 5. cover;refrigerate 2 hours or up to 2 days. Serve on lettuce leaves. Sprinkle with basil. |
