Marinated and Grilled Skewered Chicken |

Found this in my recipe box on a handwritten card. It is a mystery to me where this came from since I don't recognize the writing. Ingredients:
6 boneless skinless chicken breasts |
1/4 cup soy sauce |
3 tablespoons dry white wine |
2 tablespoons lemon juice |
2 tablespoons cooking oil |
1 dash pepper |
1 teaspoon fines herbes |
1/2 teaspoon gingerroot |
1 garlic clove, minced |
1/4 teaspoon onion powder |
Directions:
1. Cut the chicken into strips, 1-1 1/2 inches wide, 1/4 inch thick. 2. Thread onto bamboo skewers. 3. Place skewers in a 12 X 7 1/2 baking dish. 4. Combine rest of ingredients and pour over the chicken. Cover and chill for 2-3 hours. 5. Drain. 6. Grill 3-4 minutes per side. 7. Garnish with cherry tomatoes and parsley. |
