MARINARA SAUCE-FREEZE IN 1/2 CUP SERVINGS Ingredients:
16 tomatoes |
1/3 cup olive oil |
6 cloves garlic |
2 large onions |
4 carrots, finely chopped |
2 tbsps dry basil |
1 tbsp oregano leaves |
2 1/2 tsp salt |
1 tsp pepper |
Directions:
1. IMMERSE TOMATOES A FEW AT A TIME, IN BOILING 2. WATER FOR ABOUT 1 MINUTE. LIFT OUT WITH A SLOTTED SPOON AND PLUNGE INTO COLD WATER. PEEL OFF AND DISCARD SKINS. COARSELY CHOP TOMATOES TO MAKE 12 CUPS 3. HEAT OIL IN A 5 QUART OR LARGER POT OVER MEDIUM HEAT. COOK GARLIC, ONIONS AND CARROTS 4. STIRRING OCCASIONALLY, UNTIL SOFT. STIR IN TOMATOES BASIL, OREGANO, SALT AND PEPPER. BRING TO A BOIL. REDUCE HEAT AND SIMMER RAPIDLY, UNCOVERED AND STIRRING OCCASIONALLY FOR ABOUT 1.5 HOURS OR UNTIL SAUCE IS VERY THICK AND REDUCED BY ABOUT HALF. LET COOL AND POUR INTO FREEZER CONTAINERS, COVER AND FREEZE. MAKES 1.5 TO 2 QUARTS |
