Nice and simple and tasty. I use this as a basic pasta sauce and a base to many more sauces. It is a recipe I tweaked a bit from Everyday Italian cookbook.
Ingredients:
1/2 cup extra-virgin olive oil
2 onions, finely chopped
2 garlic cloves, finely chopped
2 celery ribs, finely chopped
2 carrots, peeled and finely chopped
1/2 teaspoon salt, plus more to taste
1/2 teaspoon black pepper, freshly ground plus more to taste
2 (32 ounce) cans crushed tomatoes
1 tablespoon parmesan cheese
2 teaspoons oregano
1 teaspoon basil
2 bay leaves, dried
Directions:
1. In large pot, heat the oil over medium high heat. Add onions and garlic and sauté until onions are translucent, about 10 minutes. Add the celery and carrots and 1/2 tsp each salt and pepper. Sauté until vegetables are soft, about 10 minutes.
2. Add tomatoes, cheese, oregano, basil and bay leaves and simmer uncovered over low heat until sauce thickens, about 1 hour.
3. Remove and discard the bay leaves, season with more salt and pepper to taste.
