This marinade is enough for 12 pieces of chicken. Recipe is taken from Savannah Style a cookbook published by the Jr. League there in 1980. You marinate the chicken pieces, then cook them in a pan on the grill, turning frequently, then remove from pan and place chicken pieces directly on grill for about 10 minutes. Original recipe used in addition 2 1/2 tsp salt, but I think this would be salty enough from the soy sauce, Cooking time is marinating time. Ingredients:
1 1/2 cups oil |
3/4 cup soy sauce |
1/4 cup worcestershire sauce |
2 tablespoons dry mustard |
1 tablespoon pepper |
1/2 cup wine vinegar |
1 1/2 teaspoons parsley flakes |
1/2 cup lemon juice |
2 tablespoons sugar |
Directions:
1. Combine all of the ingredients, stirring well. 2. Pour over the chicken pieces & let stand in refrigerator overnight. 3. Cook on grill as directed above. |
