Marinade for Beef (Sauerbraten)

This marinade is good on any cut of beef or venison suitable for pot roast.
Ingredients:
2 cups cider vinegar
2 cups water
1 onion, sliced
1/4 cup sugar
2 teaspoons salt
12 whole peppercorns or 1/2 teaspoon cracked pepper
3 whole cloves
2 bay leaves
1 lemon, quartered
Directions:
1. Place all ingredients into a stainless steel sauce pan and bring to scalding (don't boil).
2. Remove from the heat.
3. Place your uncooked meat into a coverable non aluminum container and pour the hot marinade over it, then let it cool before refrigerating.
4. Marinate for 4 days before you cook the meat.
