Moist and delicious!Nothing really fancy about this recipe, except it's great comfort side dish. I've accumulated serveral recipes and have combined them to make this. Many variations Ingredients:
1/2 cup raisins (jumbo ones can be purchased from a health food store) |
1/2 cup frozen apple juice concentrate, thawed |
1/2 cup butter |
2 medium onions, chopped |
2 minced garlic cloves (buy garlic already minced) |
1 (16 ounce) package pork sausage |
2 large granny smith apples, chopped |
3 celery ribs, chopped |
1 (8 ounce) package stuffing croutons |
3 cups chicken broth |
2 large eggs, lightly beaten |
1/2 cup chopped fresh parsley |
1 tablespoon chopped sage |
1 teaspoon chopped thyme |
1/4 teaspoon chopped clove |
1 teaspoon salt |
1 teaspoon pepper |
1 cup chopped pecans (optional) |
1 (12 ounce) can ocean spray jellied cranberry sauce (optional) |
1 cup chopped cranberries (optional) |
Directions:
1. Combine raisins and apple juice, let stand for 2 hours. 2. Melt butter in a large skillet over medium heat; add onion and garlic and saute 5 minutes or until tender. Add sausage, and cook, stirring until it crumbles and is no longer pink; drain. Stir in apples and celery and cook, stirring occasionally (for about 10 minutes). Transfer mixture to a large bowl. Stir in raisin mixture, croutons, and remaining ingredients until moistened. Spoon into lightly greased 13X9 baking dish. Bake covered at 350 degrees. |
