This is a recipe I developed from a Pillsbury Cookbook recipe I found one day. I am sure it makes more than 10 servings the way I make it, but can't tell you how many. I really love it, but there are waaaay tooooo many beans in it for me, as I don't like them! Read more ! Stovetop cooking time I estimate at between 2-3 hrs.
Ingredients:
1/4 cup chopped onion
1 med. zucchini; sliced
2 tbsps. margarine or butter
1 10-oz. pkg. green giant baby lima beans frozen in butter sauce
1 sm. pkg. frozen corn kernels
1 sm. pkg. frozen peas & corn mixture
1 sm. pkg. frozen green beans (cut in pieces)
3 (10 1/2 oz.) cans beef broth
2 (16 oz.) cans whole or chopped tomatoes; undrained, cut up if whole tomatoes are used
1 1/2 cups water
1/2 cup broken vermicelli; uncooked
1 tbsp. grated parmesan cheese
1/4 tsp. basil leaves
1/4 tsp. pepper
1/8 tsp. garlic powder
dash cayenne pepper
Directions:
1. In lrg. saucepan over med. heat, saute onion & zucchini in margarine
2. until vegetables are crisp-tender.
3. Remove frozen Lima beans from pouch: add to sauteed vegetables.
4. Stir in remaining ingredients.
5. Simmer, stirring occasionally, about 15 mins. OR until vermicelli is tender but still firm.
6. MICROWAVE DIRECTIONS: In 6 qt. casserole, melt margarine. Stir in
7. onion & zucchini; microwave on HIGH for 3-4 mins. OR until vegetables
8. are crisp-tender. Stir in remaining ingredients as directed above.
9. Microwave on HIGH for 15-20 mins. OR until vermicelli is tender but
10. still firm.
11. MARILYN'S NOTES:
12. I added the corn, green beans, peas & carrots to the original recipe.
13. Couldn't find the Baby Lima Beans in Butter Sauce, so used 10 oz. of
14. Butter Beans. Next time I'd only use 5 oz. Couldn't find cans of Beef
15. Broth, so used the boxed kind and used 3/4 of the carton. Couldn't
16. find Vermicelli, so used Capalini and I think that was perfect. Forgot
17. to put in Cayenne Pepper, would add next time for a bit more zing!
18. Instead of 1 1/2 cups Water, I put in 8 ozs. of water. I doubled all
19. spices. I forgot to saute the zucchini. I put everything in my
20. largest casserole (not nearly big enough...need at least 6 qt.
21. casserole) and thought I followed the microwave directions...the soup was not nearly done after 4 mins. (that's how long I thought it was supposed to take! Silly me! I didn't read all of the directions, apparently.). Anyhow, by this time it was 8 pm (hubby had gone on errands
22. and went grocery shopping for me...which is probably why he couldn't
23. find things...can't imagine Wegman's not having all of those
24. ingredients! So, put everything in my soup pot (8 qt.) and next
25. day brought the soup to a boil, then simmered for 2-3 hrs. (forgot to
26. time it!) But you want the veggies to be fork tender and the pasta
27. cooked! The butter beans didn't cook thoroughly enough for us.
28. But, the soups tasted great and would make again! I would not make
29. microwave cause I don't have a big enough micro-wave safe casserole or
30. pot. This was very easy to prepare...I think it took under 5 mins. to
