Very low calorie-Great for filling up or getting vegetables in. Makes 10 1 cup servings Ingredients:
2 tsp olive oil |
3/4 c onion, chopped |
3 cloves garlic, minced |
48 oz broth, low sodium |
15 oz stewed tomatoes (1 can) |
2 c mixed vegetables |
2 c shredded cabbage |
1/4 tsp ground pepper |
1 tsp basil or oregano |
Directions:
1. In a large pot saute onion and garlic in olive oil (about 2 min) 2. Add broth and rest of ingredients 3. add 1 cup of water if needed 4. Simmer for about 20 minutes |
