Marie's Yummy Peanut Butter Veggie Dish

Yumm FAT!!! and yum veggies! Serve over brown or basmati rice. College dish!
Ingredients:
1 small onion, chopped
1 teaspoon olive oil
1/2 sweet potato, diced
1 roma tomato, diced
1 cup broccoli floret
1 teaspoon dried thyme
1 teaspoon paprika
1 pinch cayenne pepper
salt and pepper
2 tablespoons all-natural crunchy peanut butter
Directions:
1. In a medium pot, over medium/high heat, sautée the onion in the olive oil. add all the rest of the ingredients, except for the peanut butter, and cover with a bit of water, and let cook down for 20 minutes.
2. Add the peanut butter.
3. If it looks too thick, add a bit of water.
4. Serve over rice.
