Marie's Yummy Peanut Butter Veggie Dish |

Yumm FAT!!! and yum veggies! Serve over brown or basmati rice. College dish! Ingredients:
1 small onion, chopped |
1 teaspoon olive oil |
1/2 sweet potato, diced |
1 roma tomato, diced |
1 cup broccoli floret |
1 teaspoon dried thyme |
1 teaspoon paprika |
1 pinch cayenne pepper |
salt and pepper |
2 tablespoons all-natural crunchy peanut butter |
Directions:
1. In a medium pot, over medium/high heat, sautée the onion in the olive oil. add all the rest of the ingredients, except for the peanut butter, and cover with a bit of water, and let cook down for 20 minutes. 2. Add the peanut butter. 3. If it looks too thick, add a bit of water. 4. Serve over rice. |
