My cousin's squash casserole and our favorite to enjoy summer's abundance. As a bonus, it's best made the day before and refridgerated before cooking. Freezes well. Ingredients:
1/2 cup butter |
11/2 lbs. squash, sliced |
2 small onions, diced |
1 pkg herbed stuffing mix |
1 can cream of chicken soup |
4 small carrots, grated |
Directions:
1. Cook squash in water, drain and mash. 2. Melt butter and mix with 1/2 stuffing mix. Line a casserole dish with mixture, saving a little for topping. 3. Mix remaining stuffing mix, squash and other ingredients. 4. Bake at 350 for 45 minutes. |
