My cousin's squash casserole and our favorite to enjoy summer's abundance. As a bonus, it's best made the day before and refridgerated before cooking. Freezes well.
Ingredients:
1/2 cup butter
11/2 lbs. squash, sliced
2 small onions, diced
1 pkg herbed stuffing mix
1 can cream of chicken soup
4 small carrots, grated
Directions:
1. Cook squash in water, drain and mash.
2. Melt butter and mix with 1/2 stuffing mix. Line a casserole dish with mixture, saving a little for topping.
3. Mix remaining stuffing mix, squash and other ingredients.
4. Bake at 350 for 45 minutes.
