Although has to freeze overnight - this is a real easy and good dessert for any occasion.......probably more in the summer though......Enjoy
Ingredients:
1 1/2 cups ritz crackers crushed (about 1/ 1/2 rolls)
4 tbls sugar
6 tbls softened margarine
3 pts vanilla ice cream
3 pints lime sherbert (could use any flavor -lime is good)
4 tbls fresh lemon juice
1 tsp lemon rind
6 tbls margarine
2 eggs beaten
1 cup sugar
Directions:
1. mic the first three ingredients together and press into a 9x13x2 pan
2. Soften the ice cream and sherbert and mix together and spread over the crust and freeze the mixture overnight
3. NOTE: you can use 1/2 gal of each depending on how thick you want it...it is actually cheaper to buy by the 1/2 gallon...what you don't use freeze and eat as snack
4. mix the last group of ingredients together and cook over low to medium heat until it comes to a boil-stirring constantly (it sticks easily if the heat is too high)
5. cool completely and spread over ice cream mix
6. cover with Cool Whip and Freeze
7. Easily cut and served.............
