My Southern Grandmother's easy pound cake. It's neither too sweet nor too greasy and the outside is delightfully crunchy. WE like it just for snacks but it works very well served with fruit. Ingredients:
2 cups flour |
2 cups sugar |
1 cup vegetable shortening |
6 whole eggs |
1 teaspoon vanilla |
1 teaspoon lemon extract |
Directions:
1. Preheat oven to 325 2. Put all ingredients into a large mixing bowl and beat all at one time. 3. Test, by dropping a little batter into a cup of cold water. 4. If it floats, it is ready to bake. I don't think you can overbeat it, though. 5. Grease and lightly flour a tube cake pan. 6. Pour batter into the pan and bake at 325 degrees for about one hour and fifteen minutes. 7. Cool slightly and remove from pan by inverting. 8. Place on a cake plate right side up. 9. Is GREAT served warm with peaches or any fresh or canned fruit. |
