I live on this during field tomato season! Ingredients:
2 large beefsteak tomatoes |
1/2 red onion |
1/4 cup olive oil |
1/4 cup balsamic vinegar |
2 cloves garlic |
1/2 cup black olives |
100 grams feta cheese |
1/4 cup fresh basil |
1 tsp oregano |
1/2 tsp thyme |
Directions:
1. Chop tomatoes and onion and put in bowl. 2. Mince garlic and basil leaves and add to bowl along with kalamari olives and cubed light feta cheese. 3. Mix oil and vinegar, add oregano and thyme, and toss all with tomato mixture. 4. Chill. 5. Makes a great salad or can be served with warm rice or pasta for a meal. |
