Marg's Gnocchi with Black Beans and Spinach |

adapted from Jannid's recipe, with the oil halved and black beans subbed for white. Ingredients:
1 tbsp olive oil |
450 grams gnocchi (16 oz pkg) |
1 medium yellow onion, thinly sliced |
4 cloves garlic, minced |
6 cups chopped spinach |
28 oz diced tomatoes |
15 oz black beans, rinsed |
1/4 tsp freshly ground pepper |
1/4 cup finely shredded parmesan cheese |
1/2 cup shredded part-skim mozzarella cheese |
Directions:
1. Cook gnocchi and drain. 2. Fry onion in oil until soft, adding garlic toward the end. 3. Add everything else except cheese and heat through. 4. Add cheeses and warm, stirring, until melted. |
