One of my favorite sweet potato casserole recipes. Very rich; wonderful. Ingredients:
2 cups cooked sweet potatoes |
1/2 cup sugar |
1 egg |
1/4 cup margarine |
1/2 teaspoon cinnamon |
1/2 teaspoon allspice |
1/2 cup coconut |
1/4 cup black walnut |
1/8 cup milk |
1/2 teaspoon vanilla |
marshmallow (large or small) |
Directions:
1. Mix together all but marshmallows. 2. Bake at 350°, 30-45 min. 3. Put marshmallows on top and return to oven until marshmallows are melted and browned. 4. I usually make this the nite ahead, and add marshmallows the following day. 5. They can be reheated and additional marshmallows added. |
