A recipe for lentil soup that a friend made for me after I came home with my second child - I begged her for the recipe. You can make with vegetable broth to be truly vegetarian if that's what you are going for. I personally plan to try adding some cut-up sausage to it! Ingredients:
1 cup lentils |
2 stalks celery, chopped |
1/2 cup barley |
1/2 teaspoon oregano |
6 cups chicken or 6 cups vegetable broth |
1/2 teaspoon cumin |
1 onion, chopped |
1/2 teaspoon black pepper |
2 garlic cloves |
2 carrots, chopped |
1/2 cup fresh spinach, chopped |
salt, to taste |
Directions:
1. Add all ingredients to a large pot and cook for 1-2 hours till all ingredients are tender. Add water as needed. |
