Family favorite recipe of Indian grandmother , a Texas family trradition for over 100 years source: Out Here magazine Note: Wolf brand chili comes in a variety: with or withour beans , spicy etc etc Ingredients:
2 lbs grated cheese ( what you like the best ) |
1 small onion chopped |
1, 24 oz can of chili ( ex wolf brand ) |
1, 15 oz can chili |
2 tbs chili powder |
water ( 15 oz or less ) |
18 corn tortillas |
Directions:
1. Grate cheese, add onion and mix well 2. set aside 3. In a large skillet empty both cans of chili, chili powder and enough water to create saucelike consisitency 4. Bring to a boil 5. Lower heat 6. Dip tortilla in chili mixture, two or three at a time, flattening them with spatula 7. Remove them when they are saturated and soft ( about 15 to 20 seconds ) 8. Place them in a baking dish to cool slightly 9. Add the cheese/onion to each tortilla and roll them up tightly in the baking dish 10. Repeat until all tortillas are filled and rolled 11. Pour remaining chili mxture over the tortillas 12. If you prefer you may add another can of chili add a half can of water, heat and use to make more sauce 13. Lastly, add cheese to top of tortillas 14. Cover with foil and bake 375F 20 to 25 minutes or simply cover dish with micro plastic and micro dish 4 to 5 minutes |
