I found this recipe in a Bon Appetit Barbeque! magazine I got back in 1990. I remembered the dish but not the recipe or where I had found it, so I went on a web search recently and I didn't find anything like this. Read more . I've been going thru old magazines, have found it, and am making sure I don't lose it again! Ingredients:
5 tbsp oil |
1 lb uncooked medium shrimp, peeled, deveined, and halved lengthwise |
1/2 cup minced green onions |
2 large garlic cloves, minced |
1/4 cup tequila |
2 tbsp fresh lime juice |
1/2 tsp margarita or coarse salt |
lime wedges |
Directions:
1. Heat oil in a heavy large skillet over medium-high heat. 2. Add shrimp, green onions and garlic and saute until shrimp turn pink, about 1 minute. 3. Remove from heat and add tequila. 4. Return to heat and bring to boil, scraping up any browned bits. 5. Transfer to a medium bowl and cool. (Can be prepared 6 hours ahead. Cover and refrigerate.) 6. Toss shrimp with lime juice and salt. Garnish with lime wedges. |
