Ingredients:
3 tablespoon(s) fresh lime or lemon juice |
1 clove(s) garlic |
1 teaspoon(s) grated lime rind |
1/2 teaspoon(s) grated orange rind |
lime slices (optional) |
4 (6oz) piece(s) salmon fillets (about 1in thick) |
1/2 teaspoon(s) salt |
2 teaspoon(s) sugar |
1 tablespoon(s) tequila |
2 teaspoon(s) vegetable oil |
Directions:
1. Combine first 8 ingredients in a large zip-top plastic bag. Add fish to bag. Seal and marinate in refrigerator 20 minutes. 2. While fish is marinating prepare side dishes as desired. 3. Preheat broiler. Remove fish from the bag and reserve the marinade. 4. Place fish on a broiler pan coated with cooking spray; broil 7 minutes or until fish flakes easily when tested with a fork, basting occasionally with reserved marinade during the 7 minute cooking time. 5. Serve with rice or pasta. Garnish with lime slices if desired. |
