This is a fantastic pie that I got from a friend in turn who owns a great little home cooking restaurant. This is one of his specialities and no matter how many of these he makes he sells out. Love this pie.
Ingredients:
14 ounce can sweetened condensed milk
1/4 cup gold tequila
6 tablespoons lime juice
2 tablespoons orange juice
4 large egg yolks
2 large egg whites
1 tablespoon sugar
1 graham cracker pie crust
Directions:
1. Preheat oven to 325.
2. Whisk together milk, tequila, juices and egg yolks until just combined well.
3. In another large bowl beat egg whites and sugar with electric mixer until they hold soft peaks.
4. Stir 1/4 meringue into milk mixture to lighten then fold in remaining meringue gently.
5. Spoon filling into crust then bake until edges are puffed but not browned about 30 minutes.
6. Cool pie completely on a rack then chill loosely covered until cold about 2 hours.
