fruits douced in an itsy bitsy bit of tequila, combined with a teeny weeny bit of heat. Ingredients:
1/2 cup freshly squeezed lime juice |
1/4 cup honey |
1 oz tequila, optional |
pinch salt |
1/4 cup fresh mint, chopped |
2 fresh peaches |
2 fresh nectarines |
2 fresh plums |
1/4 sliced strawberries |
1 cup raspberries |
1 cup grapes; halves |
1 cup watermelon, balled or cubed |
pinch cayenne pepper |
lime wedges, for garnish |
mint sprigs, for garnish |
Directions:
1. For the dressing, combine the lime juice, honey and tequila in a small bowl and whisk until the honey dissolves. 2. Add a pinch of salt, to taste. 3. Add chopped mint; set aside while cutting the fruit. 4. For the salad, rinse fruit and remove the pits; 5. cut into thin wedges or 1-inch chunks. 6. Combine all fruit in a large bowl; pour dressing over the fruit, stirring gently to distribute. 7. Sprinkle on cayenne pepper and adjust to taste. 8. Garnish with lime wedges and a mint sprigs. |
