I made these for Cinco de Mayo this year. They were absolutely delicious! I used Sauza Margarita Mix with the tequila already in it. It was only $9 for a box, which is equal to a 1.75 L. Very tasty! I also added some lime juice for extra zing! For the frosting, I mixed in a little bit of margarita mix with the cream cheese frosting and added some lime juice. I put it in a ziploc bag so that I could pipe the frosting easily. Be creative and add a little straw, umbrella, or a sugared lime! These are sure to be a hit at any party! Ingredients:
1 (16 ounce) box white cake mix |
9 1/2 ounces margarita mix |
1/2 ounce orange juice |
3 large egg whites |
2 tablespoons vegetable oil |
1 lime, zest of |
1 (16 ounce) can cream cheese frosting |
green sprinkles |
Directions:
1. Preheat oven to 350 Degrees. 2. Line 24 muffin tins. 3. Mix wet ingredients. 4. Add to dry ingredients. 5. Beat low for 30 sec. 6. Beat Medium for 2 minute. 7. Fill each one 2/3 of the way full. 8. Bake 20-25 minutes. 9. Frost after cooling. 10. Top with green sprinkles. |
