1 1/2 cups mayonaise |
1/2 cup white vinegar |
1 1/2 head purple cabbage, sliced |
1 yellow onion, sliced |
1 yellow bell pepper, sliced |
2 cucumbers, peeled, halved and sliced |
2 avocados, cut into pieces |
3/4 cup italian bread crumbs |
3/4 cup (3 ounces) freshly grated parmesan cheese |
3/4 teaspoon salt |
1 1/2 teaspoons freshly ground pepper |
Directions:
1. Mix the mayonaise and vinegar in a bowl and blend well. 2. Chill until ready to serve. 3. Combine the romaine, cabage, onion, bell pepper, cucumbers and avocados in a large bowl. 4. Sprinkle with the bread crumbs, cheese, salt and pepper. 5. Add the mayonaise mixture and toss to coat. 6. Serve immediately. |
