This is incredibly good. I make it all summer long when corn is good and sweet. Ingredients:
12 ears sweet corn |
1 white onion |
1 red bell pepper |
2 tomatoes |
1 stick butter |
1 tablespoon of salt |
1 tablespoon black pepper |
1/2 teaspoon cayenne pepper |
Directions:
1. Chop onions and bell pepper finely. 2. Cut corn off the cob keeping the juice. 3. Sauté onion, bell pepper and tomato in butter until onions look almost clear then add corn and cook for 10 minutes. 4. Add black pepper and cayenne pepper. 5. Cook 20 minutes longer. |
