Ingredients:
2 tablespoons shortening |
1 medium onion, coarsely chopped |
1/2 cup chopped green pepper |
12 ears fresh corn, cleaned and kernels cut from cob |
1 cup chopped tomatoes |
1/4 cup milk |
1 1/4 teaspoons salt |
1/2 teaspoon sugar |
1/8 teaspoon pepper |
dash of red pepper |
1 tablespoon butter or margarine |
Directions:
1. Melt shortening in a large Dutch oven. Add onion and green pepper; sauté until tender. Add corn, tomatoes, milk, salt, sugar, and pepper. Cook, uncovered, over medium heat 30 minutes, stirring frequently. Stir in butter before serving. |
