Mapled Boston Baked Beans |

There are a lot of Boston Baked Bean recipes out there with slight variations. This is how my mom made them and how I make them and they are my personal favourite side with a nice ham and scalloped potatoes. I'll often add a few table spoons of molasses as they bake to make them darker and richer, it is something my mom and I argue over EVERY time we make them together. Ingredients:
3 cups navy beans |
1 medium onion, chopped |
1/2 teaspoon pepper |
1 teaspoon salt |
1 1/2 teaspoons dry mustard |
5 tablespoons molasses |
3 tablespoons maple syrup |
2 1/2 tablespoons brown sugar |
300 g salt pork, chunked |
Directions:
1. Soak beans overnight. 2. Boil beans for about 45 minutes until soft but not mushy. 3. Combine all ingredients in a bean pot. 4. Bake in 325 degree oven for 4 - 5 hours stirring regularly and adding just enough hot water now and then to keep moist. |
