Maple Walnut Pie from Egg Farmers of Ontario |

This favourite recipe from egg farmers Elwyn and Pauline Embury of Newburgh tastes like a cross between a butter tart and a pecan pie! Ingredients:
1 (9 inch) unbaked pie shell |
3 eggs, lightly beaten |
1 cup packed brown sugar |
1/2 cup quick cooking oats |
1/2 cup chopped walnuts |
1/2 cup evaporated milk |
1/2 cup maple syrup |
1/4 cup butter or margarine, melted |
1 teaspoon vanilla or maple extract |
pinch salt |
Directions:
1. Combine eggs, brown sugar, oats, walnuts, evaporated milk, maple syrup, butter, vanilla extract, and salt in a medium bowl. Whisk together until well blended. Pour filling into pie shell. 2. Bake in a preheated 350 degrees F (180 degrees C) oven until set, 35 to 40 minutes. Let cool, then chill before slicing. |
