MAPLE SYRUP BEEF STEW This recipe came from an estate sale. I obtained it when I purchased the family collection from the Aiken Estate in Mesquite, Texas in 1983. Ingredients:
3 pounds beef cubed into 1” pieces |
3 tablespoons vegetable oil |
2 cups chopped white onions |
3/4 cup maple syrup |
3 cups potatoes skin on |
2 cups turnips diced |
1 cup green onions cut into small rounds |
4 cups beef stock |
1 teaspoon salt |
2 teaspoons freshly ground black pepper |
Directions:
1. In pan heat oil then add beef and cook until pieces are cooked on all sides. 2. Add onions and cook for 1 minute then add maple syrup and continue to cook 4 minutes. 3. Put in potatoes, turnips and green onions then cook while stirring for 3 minutes. 4. Add stock, salt and pepper then simmer 2 hours. |
