Maple Rhubarb Jam

Ingredients:
1 1/2-2 lbs rhubarb, cut in 1 inch pieces
1/2 cup sugar
1/2 cup pure maple syrup
1/4 cup white wine (optional)
1 tablespoon lemon juice
1 vanilla bean, split
Directions:
1. In a baking dish, stir together rhubarb, sugar, maple syrup, wine, lemon juice and vanilla bean.
2. Bake on lower rack of 350* oven, stirring once gently, until bubbly and thickened, about 90 minutes.
3. Let cool, scrape vanilla bean into jam and discard bean. Stir to combine before serving.
