A side dish - goes really well with pork or ham roasts From Cooking Light, OCTOBER 1997 Original recipe called for Red Delicious apple, but they are too soft - use any crisp apple Ingredients:
1 1/2 lbs fresh pumpkin, cubed & peeled (4 cups) |
1 1/2 cups apples, chopped |
1/2 cup onion, finely chopped |
1/3 cup raisins |
2 tablespoons butter |
3 tablespoons maple syrup |
1/4 teaspoon salt |
1/4 teaspoon ground ginger |
Directions:
1. Melt butter in a large non-stick skillet. 2. Combine the next 4 ingredients in the skillet and cover. 3. Cook over medium-high heat 20 minutes or until tender, stirring occasionally. 4. Stir in syrup, salt, and ginger. |
