This recipe was in Parade magazine. It was submitted by Jo Ann Kurtz. Thanks, Jo Ann! The cookies remind me of the Russian Tea Cakes my mother used to make, but with a maple flavor.
Ingredients:
1 cup butter, softened
1/2 cup sugar
3 tablespoons real maple syrup
1 egg yolk
1/2 teaspoon vanilla
1/2 teaspoon maple extract
2 cups flour
1 1/2 cups chopped pecans
Directions:
1. Beat butter until creamy. Add sugar gradually, then add syrup, egg yolk, and extracts; beat well. Stir in flour and pecans.
2. Divide dough in half and shape into logs 2 in diameter. Wrap in plastic wrap and refrigerate until firm.
3. Preheat oven to 350°F.
4. Cut logs into 1/2 thick rounds; arrange on greased cookie sheets. Bake for 18-20 minutes, or until golden brown.
