Higher calorie treat. Perfect for Holidays. Experiment with egg replacer Ener-G etc (original recipe called for 2 eggs might lower calories) Picture shows cake made in glass dish. this will increase servings to Ingredients:
3 cup flour |
2 tsp baking powder |
1 1/4 tsp salt |
1 tsp baking soda |
1 tsp cinnamon |
1/2 tsp nutmeg |
2 tbsp flaxseed, mixed with |
8 tbsp water |
16 oz pumpkin |
1 cup light brown sugar |
1/2 cup maple syrup |
1/4 cup applesauce |
1/2 cup raisins |
1/2 cup chopped pecans |
Directions:
1. In large bowl mix the first 6 ingredients. In another bowl combine the next 5 ingredients. Grease a 9x5 inch loaf pan. Stir liquid ingredients into dry ingredients and stir until moistened. Add raisins and nuts, then spoon into loaf pan. Bake for 1 1/4 hours in a 350 oven. Cool bread on a wire rack in the pan for 10 minutes. Then remove and let completely cool on rack. |
